Zarza Coffee is a family-owned coffee project rooted in the mountains of Bruselas in Huila, Colombia, an area celebrated for producing exceptional specialty coffee. Now in its third generation, the Gasca family combines traditional knowledge with a forward-thinking approach to coffee production.

Launched in 2022, the project places a strong emphasis on quality control at every step. From carefully selecting only fully ripe cherries to managing fermentation and oxidation with precision, each stage is designed to enhance the final cup profile.

With a focus on sustainability, traceability, and continuous improvement, Zarza Coffee produces refined Colombian coffees known for their balance, clarity, and expressive character, reflecting both the region’s potential and the family’s dedication to their craft.

Harvesting only ripe cherries. Oxidation for 12 hours, followed by anaerobic fermentation for 42 hours. The coffee is then pulped and finished with a thermal shock using water at 60°C. Final drying takes place in raised beds (marquesinas) for 10–12 days.
