Zarza Coffee is a family-owned coffee project rooted in the mountains of Bruselas in Huila, Colombia, an area celebrated for producing exceptional specialty coffee. Now in its third generation, the Gasca family combines traditional knowledge with a forward-thinking approach to coffee production.

Launched in 2022, the project places a strong emphasis on quality control at every step. From carefully selecting only fully ripe cherries to managing fermentation and oxidation with precision, each stage is designed to enhance the final cup profile.

With a focus on sustainability, traceability, and continuous improvement, Zarza Coffee produces refined Colombian coffees known for their balance, clarity, and expressive character, reflecting both the region’s potential and the family’s dedication to their craft.

Harvesting only ripe cherries. Anaerobic fermentation for 76 hours. The cherries are then floated and oxidized for 12 hours in baskets. This is followed by submerged fermentation, starting with water at 60°C for 24 hours. Final drying takes place in raised beds (marquesinas) for 12–17 days.
