Finca Las Flores is a family-owned specialty coffee farm located in San Isidro, Acevedo, Huila, Colombia, at 1,750 MASL. Established in 1990 by Edilberto Vergara and Nubia Ayure, the 16-hectare farm has grown from just 2 hectares of coffee to full production, becoming a recognised producer of high-quality Colombian specialty coffee.

In 2006, the farm entered the Cup of Excellence, marking its transition from traditional coffee production to a focus on exceptional cup quality and specialty markets. Today, the second generation continues this legacy, investing in improved agricultural practices, varietal selection, and advanced processing methods tailored to Huila’s unique altitude and terroir.

Finca Las Flores is committed to innovation, traceability, and the production of distinctive microlots that showcase the character and potential of Colombian specialty coffee.

This Las Flores Red Bourbon washed micro-lot coffee (22–26 screen size) undergoes a 12-hour submerged whole-cherry fermentation, followed by 24 hours of cherry oxidation and 48 hours of anaerobic fermentation after depulping. The coffee is then mechanically dried in a dehumidifying machine at 50 °C for 30 minutes and stabilized for 36 hours, producing a clean, structured cup with enhanced sweetness and clarity.
