Farm Info

Finca El Edén, owned by Rodrigo Sanchez, is located in the Samaria district of Palestina at 1,500 MASL. The farm’s ideal climate, with over 8 hours of sunlight and annual rainfall between 1,800–2,000mm, supports cultivating high-quality varieties like Pink Bourbon and Purple Caturra. Harvests occur year-round, with peak seasons in October–December and a secondary harvest in May–June.

The coffee cherries are carefully selected and floated to remove impurities before being evaluated for optimal Brix levels. Selected micro-organisms, including Lactobacillus and Saccharomyces cerevisiae, are cultivated and combined with red fruit juices to create a mother culture used for fermentation. The cherries then undergo a controlled 190-hour fermentation, with Brix levels maintained above 6 and pH above 4 to enhance vibrant fruit notes while preserving the coffee’s natural character.
