Farm Info

El Mirador Farm spans 30 hectares with nutrient-rich sandy-loam and clay-loam soils, ideal for producing high-quality specialty coffee. Coffee is grown under semi-shade systems that help regulate temperature and support healthy photosynthesis. The farm has two harvest seasons, mitaca (May–July) and the main harvest (September–December), with cherries typically reaching around 20° Brix and 90% ripeness. Processing methods at El Mirador include Natural, Washed (Maceration), and Honey, contributing to distinctive and complex cup profiles.

The cherries are naturally dried and fermented for 8–12 days, then rehydrated in water tanks for 24–36 hours before being de-pulped and honey-dried for 15–20 days to enhance sweetness, complexity, and flavour development.
